Recipe for Egg Salad

I’d never eaten an egg salad sandwich until about a year ago. I know that sounds silly as they’re supposed to be something of a staple sandwich. Or perhaps just an alternative to PB&J? But when I came across this recipe, which was so simple, yet so flavorful, I had to try egg salad.

To my pleasure, this egg salad sandwich rocks. It’s so good, I’ll admit to eating the egg salad even without bread. (If you’re interested in making your own bread to go along, I highly recommend this white bread which I’ve made a dozen times.)

Recipe for Kale Chips

I have a potato chip obsession, but slowly kale chips, which are far more healthy for you, have been replacing my salty, crunchy cravings. These are easy to make. They also cook super quickly.

I’ve used a variety of kale — green kale, red Russian kale, and Italian kale — and my favorite is red Russian kale as it’s a little sweeter.

Stuffed Fried Bread Dough is delicious. It’s really up to you what you stuff it with. I’ve done it with mozzarella, a little basil, tomatoes, and spinach. Jason added some pepperoni to his own. I’m sure you could make some sweet ones too.

Cauliflower-Cheese Pie

Jason and I went on a little pie loving streak as we were watching Twin Peaks, and this Cauliflower-Cheese Pie was one of the many I made. This yummy pie isn’t the most healthy vegetable pie, but it is delicious and not too hard to make. Recipe is originally from the Moosewood Cookbook and calls for a grated potato crust, but I rebelled and just used my grandma’s flour pie crust.

Portobello Mushroom Burgers

On a whim, I bought portobello’s at the grocery store as a co-worker mentioned them at lunch. I’d never cooked them, and since I don’t have a grill or bbq, Jason got out his George Foreman grill. Which surprisingly worked very well.

Asparagus with Balsamic Butter Sauce and Fried Tofu with Honey BBQ Sauce

This was a meal that I sliced and diced together. Or maybe pasted in a better word: Baked Asparagus with Balsamic Butter Sauce recipe, Tex Asian BBQ Tofu recipe (my recipe so does not look like Chef Erik’s picture as I rather just used the frying instructions), and Honey BBQ Sauce recipe I’m not a big fan of bbq sauce and neither is Jason, so I had to resort to making my own. This is a true what’s in the fridge today meal.

French Fries

I bought a French Fry maker kit. (Yes, I make French Fries, not Freedom Fries.) It works to a varying degree, but I still got delicious fries out the gig. In fact, I should actually call this Cooking with Jason as I was cooking our actual dinner while he was frying fries. Delicious!
