Carrot Cake was a tradition in my family. We always made it for my father’s birthday. My father doesn’t care for crowds, and I never remember going out for his birthday celebrations. Once, we threw him a party when he turned 40. But otherwise, his birthdays were a stay at home affair.

My mother would also make this carrot cake. Which was odd given on everyone else’s birthdays, we ate a lot of store-bought cakes (especially ice cream cakes) or my maternal grandma, the family cake baker and decorator, would make them.

Food processors are genius when making this cake. I have memories of using a cheese grater to grate carrots. Now, I just throw all those carrots in my food processor, and wham, they’re shredded.

This cake stood the test of time with my taste buds. It’s delicious.

Recipe for Crepes

Crepes are wonderful versatile. They work as a sweet treat or a savory dinner. The ones I made in this example were full of mushroom, spinach, and mozzarella cheese. They are delicious so get creative with the filling. Recently, I revisited the recipe and did a cauliflower, tomato, and pepper jack filling. You can always go for a breakfast filling with eggs or something sweet like jam or nutella.

Crepes are super easy to make. If you can cook pancakes, you can do this.

Tofu Pad Thai

This was a failed experience of sorts. I’ve tried in the past to make Pad Thai, and there was just something missing. So when my friend B tried the following recipe with a good review, I figured that I try it myself. Part of the problem, for me, was the fish oil. I figured that maybe fish oil was as essential to Pad Thai as beef broth is to French Onion Soup. Instead, I just made myself sick from smelling fish oil and remembering every reason why I don’t eat fish and protest fellow “vegetarians” who do.

Jason, being the omnivore in the house, did like this recipe. Which is good as he had to finish cooking it and eat it.

Asparagus with Balsamic Butter Sauce and Fried Tofu with Honey BBQ Sauce

This was a meal that I sliced and diced together. Or maybe pasted in a better word: Baked Asparagus with Balsamic Butter Sauce recipe, Tex Asian BBQ Tofu recipe (my recipe so does not look like Chef Erik’s picture as I rather just used the frying instructions), and Honey BBQ Sauce recipe I’m not a big fan of bbq sauce and neither is Jason, so I had to resort to making my own. This is a true what’s in the fridge today meal.

I bought a French Fry maker kit. (Yes, I make French Fries, not Freedom Fries.) It works to a varying degree, but I still got delicious fries out the gig. In fact, I should actually call this Cooking with Jason as I was cooking our actual dinner while he was frying fries. Delicious!

Flower Power Strawberry Cake

Also for Jason’s birthday, I broke down and made a cake. I almost ended up not making it when I knocked my mixer’s large glass bowl off the counter and it crashed on the floor, breaking into a thousand pieces. I guess it was better that I didn’t have anything in the mixer yet…
